What's your favorite item to grill at the backyard BBQ?

Are you a steak or a chicken man? Do you incorporate any local flavor into your grilling? I like to mix hot salsa and crushed tortilla chips into the burgers before grilling, it adds a little kick.

Marinated pork tenderloin is big in our house for the family-only bbq. Most recently, we invited a bunch of friends to bring over the kids to film the backyard barbeque segment, then we actually had a back yard barbecue. We did kabobs -- which is a pretty good way to go. We did a mix of lamb, chicken and halibut -- with a variety of marinades.<br><br>We try to practice what we preach!

Daddy Clay's bbq sounds pretty fancy if you ask me... just kidding, Have you ever seen the grill boxes that you can stuff all of the kabob ingredients into? easier than sticking them on the sticks, but is it still a kabob??? hmm, we may never know.

Daddy Clay did get all fancy on us and served the Fish Kabob as well as the Shish Kebab.

Did you know that kebab is derived from an arabic or persian word that meant fried meat not grilled. It's a crazy world.

Ahhh to BBQ, one of our favorite ways to prepare supper. I think some of our favorites would have to be beer brats and Iowa chops. We boil the brats in the cheapest beer we can find. The cheaper the better the brat...don't know why, just is. After we boil them for awhile it's onto the hot grill for a tasty treat. Once the 'used' beer cools we poor it over the dog's food (the cats aren't as receptive to having their dry food get soggy), so everyone gets to have a delicious meal together. When we're not having brats, I think thick delicious pork chops win. Marinated over night then tossed on the grill after the coals have turned a good orange and white for a slow low heat cook. We don't have and refuse to use a gas grill, takes all the fun and flavor out of it. If we're going to go all fancy we'll use some hickory chips. Then again we've been known to grill out after dark, in the snow, and in other odd conditions. Nothing beats food off the grill. Oh, and I almost forgot, we tend to roast marshmallows over the coals before the flames die down, dessert first isn't so bad, and the s'mores are better than what you can make in the microwave.

Beer butt chicken.<br>Ever since some of my friends down south introduced it to me.<br>If you look around at hardware stores they are even sellin rigs specially made to hold the beer can and the chicken.

And the whole rig goes on the grill? Do you have to use low heat? How long does it take. Very curious about this one.

The rack holds the beer can in the centre and you slide the can up the chicken's butt onto the rack. the chicken then sort of stands up on the grill while it is roasted on the outside and steamed with beer from the inside.<br>The how to of beer butt chicken:<br>-Get 6 cans of beer, 1 med chicken,( note the beer to chicken ratio is important).<br>-Start the grill, open a beer and drink it.<br>-While the grill is heating prepare the chicken. Rub the chicken with olive oil and pepper, or the rub/marinade of your choice. Montreal steak spice is excellent for this.<br>-Open another beer<br>-Drink about 1/3 to 1/2 of this beer and put the can on the rack. Punch some holes in the can so that the beer steam can seep out.<br>-Slide chicken butt first onto beer can.<br>-Place on grill, cook at low/med heat for approx 45-60 min depending on how big chicken is.<br>-Note: you can roast potatoes at the same time in aluminum foil on the grill.<br>-Open 2 more beer and drink them while the chicken cooks.<br>-Check to see if it is done by stabbing the leg joint with a fork to see if the juices are clear. Also see if the leg joint is really loose and ready to fall apart easily.<br>-Remove from grill and enjoy with last beer.

We love to do ribs on the smoker, but that's an all-day affair. Mostly end up doing burgers (add salt, pepper, garlic salt, worcestershire) or grilling fish. My favorite thing about grilling is that the grill is so personal - you know the hot spots on the grill and where you can let stuff just hang out. Awesome.

Brats are #1 in my book. I've never boiled them in beer though (hope that isn't sacrilege or unmanly). I will try that next time. Because I'm terribly picky and hardly any veggies cross my lips (unless they're in salsa or the pizza sauce), corn on the cob wrapped in foil is a great grill side item.

I had a smoker for several years, but basically it rusted away. I used it a couple of times, and really lived the resulting brisket and ribs, but it was an all day ordeal. I actually STRESSED about it, which seems like exactly the wrong result for this category. So I gave mine away.

Anything done on the grill is awesome! Can't say I have a favorite cause its all good, from veggies, to steak or sea food. Heck even a hot dog on the grill can make a day!

I hate to bring this up, but I have heard that there are health concerns associated with high temperature cooking, i.e. grilling. Has anybody read anything on the topic?

Since it's Memorial Day, naturally we'll be barbecuing. I'm going to do some ribs and something I haven't had in a while ... venison. I like to marinate the venison in Italian dressing and add a few more spices to it, and then grill it. We put a rub on the ribs yesterday; I like my meat to be seasoned thoroughly so I always season them a day ahead of time. As far as barbecue sauces, I try to find different recipes online to give a shot. There's a smoked honey mustard sauce recipe I found a while ago that was a hit and I use that one a lot.

I found it here. I tried the exact recipe first, but the next time I added a little more of this and little less of that to suit my own taste. You can get a lot of different flavors for this sauce by adding and/or taking away.

After a very embarassing and almost too-gross-to-remember burger incident, we have stuck to veggies and dogs/kielbasa when we have large groups. (Which we did for the holiday) It's easier when you stick to the dogs and brats because they cook pretty evenly.<br><br>Good for grilling and a bit of a different flavor on the grill: Pineapple. It gets really sweet and it brings about a few huh comments from onlookers. Once they try it, they're hooked.<br><br>When it comes to grilling for just family we will do just about anything. Marinades, even off the shelf, are too cheap to pass up.

I forgot about this last time, but I also love to grill corn. We were watching Food Network one day and Paula Deen I think it was, grilled corn but she wrapped Bacon around it first, and left the husks on too. When it's done it is superb! Good eatin'!

I've found that I really like pork steak which is just a boston butt cut into half inch slices. It's super cheap and really hard to screw up. I've brined it, rubbed it, sauced it, slow cooked it. It's always good. Most of the time I like to use rub and sauce that I get from my local BBQ joint . If I want to get real fancy I grill some bacon wrapped rainbow trout with bacon wrapped corn on the cob.
@teddy_m I'm pretty sure I got that from Paula Dean too.

Last night I grilled tilapia for fish tacos. I can't take much credit for how good the meal was -- my wife made the white sauce and the mango salsa -- but I felt like I was back in Cabo there for a second.

We picked up our half hog from our CSA on Tuesday. I've got a whole shoulder from last year as well as the new one. We'll smoke or grill pork chops and gril up some brats in the coming week. I'll report back, for sure. One shoulder will be smoked for lunch after our little guy is baptized on Mother's Day. I may actually try finding a way to grill some of the ham. I'm not a ham fan, so something to make it more better for me would be good. Maybe bbq and grilled... Then we have two slabs of solid pork belly. That would be unsliced, unsmoked bacon. Sometime, I'll grill some of it very hot and quick.

Good stuff. Find a farmer, buy a pig.
