It's a question as old as mankind, Charcoal or Gas for grilling. I'm an old school charcoal man. Can't beat that heat.

Gas lowers the barrier to entry. I concede that the charcoal has flavor benefits, and the higher heat can have its advantages. But being able to walk out back and crank up the heat ensures higher frequency of cooking out.

Just on an offshoot, a good friend of mine made one helluva smoker out of a 80 gallon compressor tank he got at a boneyard. Yes it's HUGE but that's his thing and man is he good at it. Didnt take much work besides 5 minutes with a plasma cutter to slice the tank in half and another 5 minutes to weld on handles, legs and vents. Had it powdercoated for 25 bucks (man that's cheap) and away he went. Nothing like good salmon after being on that thing for awhile. Bwooooohahahahahahahaha...... I couldn't agree more, who doesn't stop in their tracks when they smell a charcoal grill heating up? But who has time for charcoal in the middle of the week when you get home from work @ 6:30? I own gas, but dream of charcoal.

Charcoal in our world is reserved for that really exotic off-site cookout. The beach or (less likely) the camp out. And nothing beats that.

I agree with you Daddy Clay, charcoal adds that special flavor to the food... but Im kinda afraid of charcoal.<br><br>Reason? well... when I was 9... I went to the beach with my family and burned my feet with a pile of hot charcoal lefted under the sand by some IDIOT >_< ...<br>couldnt walk for like 2 weeks...<br><br>I guess is a good reason to respect charcoal

I own gas but would nothing more than to cook with charcoal. Time just isn't there to wait for the coals to be ready. Plus with the economy the way it's going, the food will probably cost less than the coal by the time I get around to buying it. Gotta love it!<br><br>Bri-

Much safer for me to cook with gas. I've done both. But neither very often. When we have a house worthy of hosting a cookout, I'll go with gas, for simplicity.

I view the grill as a tool for giving me food, not necessarily as a tool of amusement. I don't ever like to plan my day around cooking (or grilling) so I am a gas guy. Charcoal is great because of flavor that it might add, but I don't ever have an extra half hour to wait for the coals to get where they need to be for grilling.<br><br>I used to like to charcoal, but mostly just the lighter fluid part of the process. I'm just too practical.

Well, sadly, like everybody else here, I prefer the flavor and smell that charcoal imparts, but gas grilling is all I can make the time for. Then again, one of my colleagues at work boldly proclaimed that Gas grilling is for pansies! (Note that his actual word this lugnut chose to hit me with was not pansies, but hey, this is a family forum...)

Charcoal all the way. As far as the time factor, I use a chimmeny to light my coals. It is a very quick method and you dont get the lighter fluid taste.

Time (or efficiency of) is key when it comes to feeding children! So gas it is for me too. Has anyone tried or used the infrared bbqs? They sure look interesting to me, but a bit spendy

I see a lot of guys seem to like gas, but not me. Charcoal is the only way to go. People complain about the time and hassle of charcoal, but really patience is a vital part of any bbq. Today I made a sweet rub and peach bbq suace from scratch to dress a 5lb. pork tenderloin that took about an hour and half to cook. Sure I coulda bought sauce from the store and used a gas grill to speed the process up, but let me tell you, there's way more appreciation and reward in homemade, charcoal grillin'. There's stories in the coals of a bbq and techniques to be handed down from generation to generation. If you like gas, cool, it's just not my thing. I guess I like being rewarded for all my work.

Our gas is for the smoker and making beer. Using the chimney starter with chunk charcoal and newspaper either greased up with cooking oil or wrapped around a piece of bacon grease soaked paper towel lights it up fast with no tending. Gas always took more time for me since I'm always using all the propane I have to smoke turkeys or brew beer. Even if I have the extra tank, I grab the one from the grill at some point to keep the other things going.

@Ben,<br><br>Bacon greased paper towels as a starter, very interesting. Does it smoke much?<br><br>They also may taste better than the frozen three year old flank steak I broke out the other night.

The grease just makes the yard smell like bacon. Nothing bad about that! The grease wicks through the towel making it burn longer and also seems to reduce the amount of ash left from the starter.<br><br>Eating the towels probably wouldn't be so good. Mine are coated in charcoal dust because the towels are in a ziplock I keep in the charcoal bin.

The convenience factor aside, nothing comes even close to charcoal.<br><br>I suppose I should first qualify that with the fact that as much as a boy scout I may be with charcoal, I'm at least equally an incompetent boob when I comes to cooking with gas. At a total loss without charcoal, on a family vacation I once incinerated an entire freshly-caught 12-pound Pacific Coho salmon into ash in no less than 15 minutes with a gas bbq. Nothing is quite so sad or pathetic as watching a grown man weep over crispy critter.

I'm with you dude. I charred $100 worth of beautiful NY Strips bought by my father in law over a too hot improvised grill this winter.<br><br>I cried and then it froze on my face cause it was -11.

1st - Wood (Great flavor- lots of oversight needed)<br>2nd - Charcoal (I assume briquettes - thats about all we have for charcoal around here- I'm not partial to the lighter fluid aftertaste)<br>3rd - Gas (Cheap, easy, controllable & fast)<br>imho<br><br>Nothing beat the flavor of a good Tri-tip slow grilled over a hardwood.... mmmmmmm. A little Poserdad's Pirate Spice ™ and you have the best Tri-tip in the whole backyard.
