509 - Quality Time – Mother’s Day Brunch with Average Betty

DADDY BRAD: In this delicious and high tech episode of Quality Time I get Betty of AverageBetty.com to help me prepare a wonderful Mother’s Day feast from a thousand miles away.

Now, I’m going to make a beautiful Mother’s Day Feast and have my kids help me but I’m a little overwhelmed so I think I’m going to call Betty of Average Betty and let her help me out. AVERAGE BETTY: Hey, Brad. How’s it going?

DADDY BRAD: It’s good. How are you?

AVERAGE BETTY: Fantastic. What’s up?

DADDY BRAD: Mother’s Day is coming up and I want to cook a wonderful brunch for my wife, Liz. I went to AverageBetty.com and downloaded the coffee cake recipe and the green chili casserole recipe but I’m freaked out. I’ve got all my ingredients spread out here. I’ve got some butter melting on the stove.

AVERAGE BETTY: Well, do you have your 9” by 13” pan?

DADDY BRAD: I do. That’s nine by thirteen.

AVERAGE BETTY: You’ve got the butter melting. Let’s go ahead and crack some eggs. We’re making the casserole I take it?

DADDY BRAD: Yeah, the green chili casserole. Hey, it’s not quiche it’s casserole. Betty, I wish you could see this. No shells! Hey, I’m going to sterilize my hands, going to wash my hands.

AVERAGE BETTY: You always want to wash your hands after you crack eggs or touch meat or touch yourself.

DADDY BRAD: Haha, touch meat. Absolutely. Those are wise words to live by. Now I have the eggs cracked. They’re in the bowl here. What do I do?

AVERAGE BETTY: Uh, beat ‘em.

DADDY BRAD: How long must I beat the eggs?

AVERAGE BETTY: Just make sure they’re nice and fluffy.

DADDY BRAD: Oh, they’re fluffy.

AVERAGE BETTY: So you want to put your cottage cheese in first.

DADDY BRAD: Just because there’s cottage cheese in here doesn’t make it sissy?

AVERAGE BETTY: There’s a whole stick of butter in this!

DADDY BRAD: That’s right, this is manly.

AVERAGE BETTY: If that’s not manly I don’t know what is.

DADDY BRAD: That’s right. If it were bacon then I’d never eat anything else.

AVERAGE BETTY: Give that a little stir around there and then start adding your other cheeses.

DADDY BRAD: Look at this. This looks kind of cool.

AVERAGE BETTY: You could probably spackle a wall with that too if you have any left over. You’re going to want to put your spinach in next. Have you kind of thawed and squeezed out your spinach?

DADDY BRAD: Yes, I have. It’s very nice and dry. Let me just make sure that that indeed is spinach because my brother-in-law goes to Grateful Dead shows and all.

AVERAGE BETTY: That could really kick Mother’s Day up a notch if you ask me, but not for Liz because she’s pregnant.

DADDY BRAD: That’s right. You need to stay away from the wacky brunch.

AVERAGE BETTY: Now you want to add in the chilies.

AVERAGE BETTY: Once you’ve mixed your dry ingredients together, the flour and the baking powder and the salt, you can pour that in and incorporate it into the eggs.

DADDY BRAD: Oh, this looks great. I might just eat it like this.

AVERAGE BETTY: That’s not a good idea. You can get really sick from eating raw eggs.

DADDY BRAD: Oh, can you? Don’t eat raw eggs.

AVERAGE BETTY: I mean. I don’t know how Rocky Balboa did it.

DADDY BRAD: I’ve got the butter.

AVERAGE BETTY: Now just pour the butter into your casserole dish. Next take your egg mixture and pour it over the butter.

DADDY BRAD: Do I cover this or uncover it?

AVERAGE BETTY: Yeah, just some tin foil. Something non flammable.

DADDY BRAD: Now I put it in the oven that I preheated and I let it cook.

Ok Betty, I’ve got the casserole in. It’s going to cook. That’s the main part of the brunch. What else? I see a little coffee cake.

AVERAGE BETTY: Oh yeah, the coffee cake. With the casserole you’ve got the little coffee cake sweetness and the savory green chili casserole. It’s got a terrible little kick to it. Not too spicy at all. The kids aren’t going to think it’s spicy. They’re not going to know there’s spinach or cottage cheese in there.

DADDY BRAD: Good way to sneak that in. Add a little fresh fruit. Maybe some cantaloupe. And then some orange juice, because it’s brunch.

AVERAGE BETTY: And if you want to spike that up with a little mimosa action, that’s definitely the way to go.
