Dad Makes Beef Muffins

Some of the best Quality Time with your family can be found in the kitchen with simple kids recipes. In this episode, Daddy Brad enlists the help of his kids in cooking a unique beef recipe - meat muffins. Inspired by cupcakes, this easy recipe uses beef as a muffin and mashed potatoes as frosting. DADDY BRAD Have your kids ever asked you to have cupcakes for dinner. Sick around for this episode for Quality time and you can say yes. Thanks to our sponsor BABYBJORN. Kids love to eat cupcakes, and moms and dad love for kids to eat meat and potatoes. Why not combine the two, meat and potato cup cakes. It may sound disgusting but its not, its awesome. Your kids will dig making these and they will dig eating them. And its incredibly simple. First for the cakes, You will need 1lb of ground hamburger, half cup of seasoned bread crumbs, 1 cup grated Monterey jack cheese, 3 tbls of ketchup, 1 egg, half tsp celery salt, and _ tsp pepper. Combine these ingredients in a big bow and thoroughly mix. Next get 12 foil baking cups and spoon the meat mixture into the cups about _ full and place in a muffin pan. Preheat the oven to 375 and put those puppies in the oven, bake for 15 to 20 minutes or until cooked through. Now for the frosting. Two ways to go here, you can buy a box of instant potatoes and follow the directions on the box or you can go a little bit healthier. If you do it from scratch here is a quick recipe. You need 4 or 5 medium white potatoes, _ stick of butter _ cup of half n half, and salt and pepper. Let the kids peel the potatoes and then you cut into medium size cubes put into a pot, cover with water and then boil for 20 or 30 minutes or until potatoes are tender. When the potatoes are tender, drain the stock, add the butter and _ mash and or blend until smooth. Separate into three or separate bowls and add food coloring, green blue whatever. Get a heave duty 1 gallon Ziplock bag and a icing tip. Cut a small hole in one corner and place icing tip. Fill the bag with colorful mashed potatoes and decorate like a cup cake. Voila!
